Soya paneer (tofu) – 200–250 g (grated or crumbled)
Boiled potatoes – 2 medium (mashed)
Bread crumbs – ½ cup
Onion – 1 small, finely chopped
Green chillies – 1–2, chopped
Ginger – 1 tsp, grated
Coriander leaves – 2 tbsp, chopped
Red chilli powder – ½ tsp
Garam masala – ½ tsp
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Black pepper – ¼ tsp
Salt – to taste
Lemon juice – ½ tsp (optional)
Maida – 2 tbsp
Cornflour – 2 tbsp
Water – enough to make a smooth slurry
Bread crumbs – 1 cup
Oil – shallow fry or deep fry
1. In a bowl, mix:
Grated tofu
Mashed potatoes
Onion
Green chilli
Ginger
Coriander
All masalas + salt
Lemon juice
Bread crumbs
2. Mix well until dough-like.
3. Shape into cutlets, tikkis, hearts, or oval.
1. Mix maida + cornflour + water → make a medium-thick slurry.
2. Dip each cutlet in slurry.
3. Coat with bread crumbs.
Heat oil and shallow fry both sides until golden brown.
For extra crispiness → double coat (slurry → crumbs → slurry → crumbs).
