
Soya paneer (tofu) – 250 g (crumbled/grated)
Oil – 2 tbsp
Cumin seeds – ½ tsp
Onion – 1 medium, finely chopped
Green chilli – 1–2, chopped
Ginger-garlic paste – 1 tsp
Tomato – 1 medium, finely chopped
Turmeric – ½ tsp
Red chilli powder – ½ tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Salt – to taste
Capsicum (optional) – 2–3 tbsp chopped
Fresh coriander – 2 tbsp, chopped
Lemon juice – ½ tsp
Crumble or grate soya paneer and keep aside.
1. Heat oil in a pan.
2. Add cumin seeds — let them crackle.
3. Add onion + green chilli and sauté till soft.
4. Add ginger-garlic paste — cook till raw smell goes.
5. Add tomatoes — cook till mushy.
6. Add turmeric, chilli powder, coriander powder, salt — mix well.
7. Add capsicum (optional) and cook 1 minute.
8. Add crumbled tofu — mix gently.
9. Cook 3–4 minutes on medium flame (don’t overcook or it becomes dry).
10. Add garam masala, mix and switch off flame.
11. Finish with lemon juice + fresh coriander.
