Shaadi-Style / home style soya paneer Gravy

Ingredients:

For Gravy:

  1. Soya paneer 250 gm
  2. Ginger-garlic paste – 1 tbsp
  3. Green chili – to taste
  4. Red chilli powder – 1 tsp
  5. cumin seeds
  6. Bay leaves
  7. Turmeric – ¼ tsp
  8. Garam masala / meat masala  – ½ tsp
  9. Salt – to taste
  10. Oil – 1 tbsp
  11. Tomato puree
  12. Kasuri methi – 1 tsp (crushed)
  13. Water – 1 cup (adjust consistency)
  14. Coriander powder – 1 tsp
  15. Milk khooa (optional)
  16. Crushed makhana ( optional)
  17. Fresh cream (optional)
  18. Cashew paste – 2 tbsp (optional for extra richness)

Method:

1. Grill / Fry paneer in oil  very lightly

You can use soya paneer without fry also

2. Make Gravy Base

In the same pan, add cumin seeds and bay leafs.

Add onion paste and sauté till golden brown.

Add ginger-garlic paste and green chillies paste sauté till raw smell disappears.

Add tomato puree and cook till oil separates.

Add cashew paste, red chilli, coriander powder, turmeric, salt, and garam masala / meat masala . Mix well.

3. Combine soya paneer and Gravy

Add soya paneer pieces into the gravy.

Add water and simmer on low flame

Add  khooa / cream into gravy for richness

Add crushed makhana into gravy and cook for 5-10 minute

Note : don’t use khooa and cream together. If using khooa then skip cream. If using cream then skip khooa in gravy while cooking

4. Finish with Spices

Add kasuri Methi, Dhaniya, little amount of garam masala, and fresh cream. Mix gently. Here you can use cream with khooa for finishing  but very small amount of cream

Add saffron milk for that signature wedding aroma (optional)

Simmer for another 5 mins

5. Smoky Aroma (Optional but authentic)

Place a small steel bowl in the gravy pan.

Heat a charcoal piece until red hot, put it in the bowl, drizzle ghee over it, cover pan for 2–3 mins.

Serve With:

Butter naan, roomali roti, lachha paratha, or steamed basmati rice

Garnish with cream swirl, chopped coriander, and fried onions for that true shaadi look

Tips:

‍use khooa always instead of cream in gravy
